The ultimate comfort food for Winter! This rich and flavourful lamb stew was cooked for 8 hours with sugarcane, carrot, water chestnut, preserved duck, lemon leaves, bean curd sticks and Chu Hou Paste. Add in deep-fried bean curd rolls and local organic lettuce for a full indulgence of the essence of this killer sauce.

The tender lamb belly gushing with earthy umami flavours and distinctive texture, and even better when dipped in the secret lime leaf fermented bean curd paste.

With the stringent selection of local preserved meats that were dried naturally under the sun and Jasmine Rice cooked in Bonito Dashi. The pork fat penetrates into the rice, and adding our rich homemade soy sauce, as well as a couple more drops of pork fat on the lid to spice up its flavours and aroma. Indulge yourself in every succulent, fragrant bite to beat the chill.

秋冬進補佳品,菊香花膠燴蛇羹以8小時之熬製。以老雞、火腿、赤肉及選用30年的老陳皮煲煮上湯,並加入蛇骨及竹蔗茅根等配料熬製而成,真材實料,盡顯火候和刀功。伴上新鮮白菊花、本地檸檬葉及傳統手工薄脆同吃,口感豐富層次分明,確是難得的佳饌。

The perfect Autumn/Winter nourishment! This 8-hour Snake Broth was slowly simmered with chicken, ham and red meat with dried tangerine peel aged over 30 years, then infused with snake bones, sugarcane and imperatae etc. Garnished with fresh white chrysanthemum, local lemon leaves and traditional handmade fried crackers for the extra fragrance and textural sensation.
